Renee’s Recipe: Kid’s Chicken Parmesan

Kid’s Chicken Parmesan
Ingredients:
- 8 oz chicken tenders
- 1 C quinoa flakes
- ¼ C. Parmesan
- 1tsp Zatarans seasoning
- 2T. oil, ghee or butter
- 1C. prepared Tomato Sauce
- 1 each tomato diced
- Heat Oven to 350°F
- Blend the quinoa flakes parmesan and Zatarans together
- Bread the chicken tenders on both sides.
- Heat an oven safe sauté pan on medium heat, add the oil
- Sear each chicken tender about 2 minutes, or until golden brown on each side.
- Place in oven for 5 minutes or until finished
- Heat tomato sauce over low heat and add the fresh diced tomato
- Serve the chicken parmesan with the sauce on top or to make it more fun in a little dish on the side. Sometimes it is all in the presentation.
Note:
These are a great alternative for a Gluten Free Family. The Quinoa flakes gives the chicken fingers just enough texture so it is familiar to the kids as chicken nuggets, while being substantial for the adults to enjoy at the dinner table too. My niece and nephew love these for any time of the day.
These chicken fingers can be breaded a head of time and seared then placed in the freezer to bake off at a later date or for a quick snack option, just heat the oven to 350°F and place on baking sheet for about 20 minutes.
